Sandwiches can be a wonderful way to use food left from another meal. Even if it a quite moist food it can be carried to work, school or a picnic safely.
Hollow out half of a roll and spread with flavored oil or mayonnaise then line with lettuce leaves to keep moisture off the bread. This way you can try filling with:

- ratatouille
- leftover curry
- sliced hard boiled eggs, tuna, beans, dollop of tapenade or pitted olives
- sliced cold potatoes in curry mayonnaise
- oven dried tomatoes and feta
- grilled eggplant, zucchini and hummus
- roast beef with garlic paste, grilled eggplant
- lamb with roasted onions and pesto
- cut up omelets strips with ham
- smoked trout and sautéed leeks
- baked pumpkin/sweet potato with macadamia spread and chili sauce
- cold fish with lemon myrtle mayonnaise and celery

Open sandwiches topped with
- ratatouille and slices of parmesan
- omelet strips and ham with finely sliced leek rings with green sauce
- add a teaspoon of sesame oil to a vinaigrette for an Asian finish for cold roast meat. Top sandwich mixture with oven crisped noodles

Tips
- cut celery in long thin strips instead of little crescents
- flavor mayonnaise or butter with a little sesame oil or black bean sauce or grated ginger for an Asian flavor
- stir anchovies or capers into the mayonnaise for a more Mediterranean image
- wrap in brown paper, tie with string and write on a swing tag . This is an easy picnic solution
