Date Nut Balls recipe

2 eggs, beaten
1 cup granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon almond extract
1 cup chopped dates
1 cup shredded coconut
1 cup chopped nuts

Heat oven to 350 degrees F.

Mix eggs and sugar; stir in vanilla and almond extracts, dates, coconut and nuts. Spoon into ungreased casserole. Bake for 30 minutes.

Remove from oven; beat well while hot. Cool.

Form into balls, using about 1 tablespoon for each. Roll in additional sugar, coating well.

These may be shaped into logs and sliced.

Yields 20 servings.
