Pecan Crisps recipe
.2 cups packed brown sugar
1 cup butter, softened
1 teaspoon vanilla extract
2 eggs
3 cups all-purpose flour
1/2 teaspoon baking soda
1 cup chopped pecans, toasted
Heat oven to 350 degrees F.
Beat brown sugar, butter, vanilla extract and eggs in a large bowl with electric mixer on medium speed, or mix with a wooden spoon, until well blended. Stir in flour, baking soda and pecans. Shape dough into 1 1/4-inch balls. Place 2 inches apart on ungreased cookie sheets. Bake 10 to 14 minutes or until edges are light golden brown. Remove from cookie sheet to wire rack.
Yields about 5 dozen cookies.
