Peanut Butter Marshmallow Fluff Coconut Cookies recipe

Makes 2 to 3 dozen.

1 cup butter (softened)
1/2 cup granulated sugar
1/2 cup brown sugar
2 eggs
1 teaspoon vanilla extract
3/4 cup creamy peanut butter
2 1/3 cups all-purpose flour
1 teaspoon baking soda
1/2 cup Marshmallow Fluff
1 cup coconut flakes

Heat oven to 350 degrees F (175 degrees C).

In a large bowl, cream together the butter, peanut butter, granulated sugar and brown sugar until smooth and fluffy. Beat in the eggs one at time, then stir in the vanilla extract.

Combine the flour and baking soda; stir in to the peanut butter mixture. Fold in the Marshmallow Fluff just until combined. Put a pinch of coconut flakes on the cookie sheet, then drop batter by spoonful onto the coconut. Repeat for remaining batter. Put a large pinch of coconut flakes on top of each cookie, then press with a fork as you would with regular peanut butter cookies to impress a criss-cross. Bake for 15 minutes.
