Cherry Macaroons recipe
.1/2 cup butter, softened
1/2 cup shortening
1 cup granulated sugar
2 eggs
1 teaspoon almond extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/2 cup chopped maraschino cherries
2 cups shredded coconut
1 cup chopped nuts
Heat oven to 350 degrees F.
Cream butter and shortening together. Gradually add sugar and mix well. Add eggs and almond extract and beat well. Blend in flour, baking powder and salt. Stir in cherries, coconut and nuts. Drop by rounded teaspoon onto lightly greased baking sheets. Garnish each cookie with 1/4 of a maraschino cherry. Bake 10-12 minutes or until lightly browned.
Make 5-6 dozen.
