Chocolate Covered Apricots recipe
.1/2 cup brandy
1/2 cup granulated sugar
Semisweet or bittersweet chocolate
1/2 cup vodka
Dried apricots
In a 1-quart jar, pour the brandy, vodka and sugar. Stir until dissolved. Pack in dried apricots. Let soak for four to six weeks, turning every week.
Dry apricots thoroughly on paper towels, then dip into melted chocolate. Chill on cookie sheet until chocolate hardens.
