#4 -- BREAKFAST  BRUNCH 

Place 8 slices of Pepperidge Farm bread (crust trimmed off) flat in 9 x 13-inch pan.    On each slice place 2 thin slices of ham and then one slice cheddar cheese, then put 8 slices on bread on top.  Mix together:
6 beaten eggs
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. dry mustard
1/4 c. minced onion
1/4 c. finely chopped green pepper
1 tsp. Worcestershire sauce
3 c. milk 

 Pour over bread.  Let stand overnight.  Before baking, melt 1/8 lb. butter and pour over top.  Cover with 1 cup potato chips and bake 1 hour at 350 degrees. 

#8 -- OATMEAL  RAISIN  SCONES 

2 c. flour
3 tbsp. brown sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. butter, chilled
1 1/2 c. oatmeal
1/2 c. raisins
1 c. buttermilk
Cinnamon & sugar for sprinkling 

 Preheat oven to 375 degrees.  Combine flour, brown sugar, baking powder, baking soda and salt.   Cut in butter until mixture resembles coarse crumbs.  Stir in oatmeal and raisins.  Add buttermilk and mix with a fork until dough forms a ball.   Turn out on lightly floured board and knead 6 to 8 minutes.  Pat dough into 1/2 inch thickness.  Cut 8 to 10 rounds or wedges and place them on ungreased cookie sheet.  Sprinkle with sugar and cinnamon.  Bake 20 to 25 minutes.

#119 -- MEXICAN  COUNTRY  STYLE  EGGS 

1 doz. corn tortillas
1 jar salsa (hot or medium)
Or
tomatoes, chile, cilantro, garlic,   onions (finely chopped)
1 doz. eggs
3-4 tbsp. lard
Butter to fry eggs
Fried beans
Grated Monterey cheese 

 Heat lard in skillet.  Fry tortilla on both sides until limp.  Drain on paper towels.  Put 2 on plate side by side, keep warm in oven.  Fry eggs in butter over easy, slide onto each tortilla spoon warmed salsa on top of eggs.  Add some beans on the side.  Sprinkle all with shredded Monterey Jack lightly. 

#120 -- BREAKFAST  CASSEROLE 

1 lb. link sausage
8 slices bread, cubed
1/2 lb. Cheddar cheese, grated
5-6 eggs
1 1/4 c. milk
3/4 tsp. dry mustard
1 (8 oz.) can chopped mushrooms
1 can cream of mushroom soup
1/2 can milk
2 tbsp. butter 

 Fry sausage and cut into bite-size pieces.  Arrange bread cubes in 8 x 12 inch pan (greased).  Cover with cheese and sausage.  Beat eggs with milk and mustard.  Add mushrooms.  Pour over top.  Cover and refrigerate overnight.  Let stand room temperature 1 hour.  Dilute soup with milk.  Pour over top.  Dot with butter.  Bake at 325 degrees for 1 hour.  let stand 10 minutes before serving.
